This is my mother-in-law recipe that we still hold on after 30 years. It never fails.
Dinstano Kiselo Zelje - Braised sauerkraut with bacon
- 2 tablespoons Olive Oil
- 1 medium onion diced
- 2 grated carrots
- 1 teaspoon tomato paste
- 1 teaspoon Vegeta
- 2 bags of sauerkraut
- 1 Polska or Kranska Kielbasa
- 4 cups of Hot Chicken Stock (Preferred)) or Hot Water
- Salt and pepper to taste
Wash Sauerkraut three times and drain well.
Sauté onion and carrots in olive oil until translucent. (You can use pancetta instead of olive oil for more flavor ). About 5 to 10 minutes on medium heat.
Add Sauerkraut, Vegeta and tomato paste and mix well.
Add Chicken Stock and cook until most of the water evaporates. About 10 minutes before its done add sliced Polish Kielbasa or Kranjska Kobasica.
